Abstract


Based on the background of the existing problem, the researcher can formulate the main problem of this research is as follows whether hygiene and sanitation affect the quality of food and drinks at Café RS PHC? Among the restaurant area components, equipment used, food and beverage ingredients and human resources that are directly related to restaurants. Which component significantly influences the quality of food and drinks at the PHC Hospital café? Based on the objectives to be achieved in this study was to determine the effect of hygiene and sanitation on the quality of food and drinks in a banana café at PHC Surabaya Hospital. Knowing the independent variable (restaurant area, equipment used, food and beverage ingredients and SDS that is directly related to the restaurant) which one has a significant effect on the dependent variable (food quality). The most influential factor in implementing hygiene and sanitation is the attitude of employees or personal hygiene of employees. From the results of the questionnaire that personal hygiene and sanitation factors greatly influence the quality of food and beverages produced.
